Draining & Malolactic fermentation
Separating the juice from the solids. Draining of the wine takes place after a period of warm maceration. The young fermented wine will be separated from solids or marc (grape skins and seeds) and moved it into the clean tanks by pumping. The marc is then pressed into a pneumatic press-machine to obtain the so-called “press wine”.
Malolactic fermentation process is usually carried out in the stainless-steel tank. Once completed the wine will be transferred into the oak barrels for aging.
